Taste of India: A Step-by-Step Guide to Making Pepper Chicken

Pepper chicken is a popular dish from Indian cuisine, it is a spicy and flavorful dish made with chicken, pepper, and other spices. The dish is typically made by marinating the chicken in a mixture of spices, including black pepper powder, cumin powder, coriander powder, and turmeric powder, along with ginger-garlic paste and salt. The marinated chicken is then stir-fried with onions, tomatoes, green chilies and some more spices, until it is cooked through and the sauce has thickened. The dish is usually served with rice or roti and garnished with coriander leaves. It can be also served with naan, parotta, dosa or idli. The pepper chicken dish can be adjusted to suit individual taste preferences by varying the amount of pepper powder and green chilies used, and by adding other ingredients such as curry leaves or cinnamon stick for additional flavor.

Ingredients:

1 lb boneless chicken cut into small pieces

2 tsp black pepper powder

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp turmeric powder

1 tsp ginger garlic paste

2 onions, finely chopped

2 tomatoes, finely chopped

3-4 green chilies, finely chopped

2 tbsp oil

Salt to taste

Coriander leaves for garnish

  Steps:

In a mixing bowl, add chicken, pepper powder, cumin powder, coriander powder, turmeric powder, ginger-garlic paste and salt to taste. Mix well and set aside for 15-20 minutes.

Heat oil in a pan, add chopped onions and sauté till translucent.

Add the ginger-garlic paste and sauté for a few seconds.

Add the chopped tomatoes and green chilies, and sauté until the tomatoes are mushy.

Add the marinated chicken, and stir-fry on high heat for a few minutes, until the chicken is cooked through.

Cook for about 5-7 minutes more on medium heat, or until the sauce has thickened.

Garnish with coriander leaves and serve hot with rice or roti.

Note:

You can adjust the amount of pepper powder and green chilies according to your preference for spiciness

You can also add curry leaves or cinnamon stick to the dish for additional flavor

You can also use chicken with bones, it will give more taste to the dish.
