Heavenly Coconut Rice: A Delicious Side Dish for Any Meal

Dry coconut rice is a delicious and flavorful variation of coconut rice that is popular in South India. 1 cup uncooked white rice
1 cup coconut milk
1 cup water
1 tablespoon vegetable oil or ghee

1 teaspoon cumin seeds
1 teaspoon black gram dal
1 teaspoon chana dal
a pinch of asafoetida
1 dried red chili, broken into pieces
a few curry leaves
salt to taste

Instructions:

Rinse the rice in cold water until the water runs clear. This helps to remove any excess starch and impurities from the rice.

In a saucepan, combine the rice, coconut milk, water, and salt. Bring the mixture to a boil over high heat.

Once the mixture is boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid.

Allow the rice to simmer for about 18-20 minutes, or until the liquid has been absorbed and the rice is tender.


In a separate pan, heat the oil or ghee over medium heat. Add the mustard seeds and allow them to crackle.

Add the cumin seeds, black gram dal, chana dal, asafoetida, dried red chili, and curry leaves. Saute for a few seconds until fragrant.
