Kesari Bath: The Perfect Dessert for Sweet Lovers

Kesari Bath is a popular sweet dish from South India, particularly from the state of Karnataka, it is a type of sweet pudding made with semolina, sugar, ghee and flavored with saffron.



Ingredients:

1 cup semolina (rava or sooji)

1 cup sugar

3 cups water

1/2 cup ghee

A pinch of saffron

A few strands of saffron for garnish

Cashews and raisins for garnish (optional)

Steps:

Heat ghee in a pan and fry the semolina until it turns golden brown.

In a separate pan, bring the water to a boil and add sugar to it. Stir until the sugar dissolves.

Add the semolina to the sugar water, stirring continuously to prevent lumps from forming.

Add a pinch of saffron and stir well.

Cook the mixture on low heat, stirring occasionally, until it thickens and starts to pull away from the sides of the pan.

Garnish with saffron strands, cashews and raisins (if using).

Serve hot or warm.

Note:

you can add food color to give nice color to the dish

you can also add milk to make it more rich
